Domaine Jean-Michel Guillon
Born in Paris, Jean-Michel Guillon arrived at Gevrey-Chambertin in 1980, thanks to “a small familial link”. He then started working to tend the vines and to make wine with viticulteur Galland – a name still used out of respect for the mentor on one village cuvées of this small, highly rated domaine. Jean-Michel has a taste for new oak, and jokes of being “the biggest oak barrels consumer” every year. In three of the domaine’s top cuvées, three big Burgundian oak vats made by Marc Grenier, himself a respected artisan cooper in Burgundy, are employed in fermentation. All the investment, along with hard work in the wonderful vineyards, helps contribute to the intense aromas, lovely structure and smoothness of the wines.
