People caught speeding in France are often made to pay on the spot a penalty which can be the biggest incentive to alcoholic abstinence. The gendarme, in all likelihood, would demonstrate as precise an operation as the best traffic police in the world. No argument, just efficiency. We had been hoping at some point between our visits to Burgundy to find a police-turn-winemaker and wondered how the wines would taste. Fantasy. Until we met Fabrice Bouard, then it turned into a real story. Along with his wife Carine, herself from a significant wine family – Bonnefoy in Chassagne – Fabrice founded Domaine Bouard-Bonnefoy and produced the first vintage in 2006. Without the back up of an entire police force, Fabrice now makes wines with everyone in the family, plus some ancient and delicate devices such as a vertical wooden press known to offer very gentle treatment to the grapes. Fabrice favours a natural winemaking, with no filtration or fining before bottling, just purity. An array of Chassagnes from this domaine can be some of the most natural wines coming out of this part of the famous wine village.
